Our Buying Policy & Environmental Responsibilities

It is important to us to buy locally where possible.  We buy the best quality produce from local producers and suppliers.  Buying locally means less “food miles” which minimises CO2 emissions and reduces protective packaging.

We use seasonal, fresh, locally produced and sourced ingredients when ever possible.  The fruits and vegetables we buy have often been picked that same day.  We ensure as far as we can that our food is produced using ethical farming techniques. We identify the local source, breed of animal and rearing conditions of our meat. The fish buying policy has been drawn up in conjunction with the recent publications of the Marine Conservation Society. Our produce board lists some of our local suppliers with food miles, we also use produce from our own farm. Local, for us may be the field next door!

We minimise food waste by cooking food to order.  We are careful not to over-order from suppliers to prevent wastage, sometimes this means we sell out of popular dishes, sorry! 

All of our fryer fat is converted into fuel by a local business.  Our vegetable waste is composted together with coffee grouts, tea bags, egg boxes and egg shells.  Our glass, cardboard, plastic & paper waste is recycled.

We are replacing light bulbs with energy efficient lighting where possible and we ensure our electrical equipment is regularly maintained so it works most efficiently.

Our kitchen team take great care in the preparation our food so that it is as fresh as possible.  Time is an essential ingredient in all our dishes so please tell us if you are in a hurry and we can advise you of dishes that need less time!
